HERE THE CHEFS INTO A JAR: JARIT comes from the idea of Matteo Pisciotta and Andrea Piantanida to put in a jar a dining experience.Their goal is to offer a high quality food, prepared with the best ingredients, according to the Italian tradition, cooked by top italian chefs as Claudio Sadler, Antonella Ricci, Katia Maccari, Giancarlo Morelli, Christian Di Bari, Matteo Pisciotta, Lorenzo Secondi, Andrea Piantanida, Alberto Broggini and Lorenzo Secondi.Thanks to the food preparation and preservation techniques, refined with care and experience, JARIT can guarantee and maintain organoleptic characteristics and flavours of each dishes, to which we devoted a lot of research and innovation. The chefs have tested more than 150 recipes with a successful result : dishes with unique and delicate flavours and intact nutritional qualities.

JARIT. ARRIVA LO CHEF NEL VASETTO
JARIT è il rivoluzionario concetto di ristorazione ideato per rendere accessibile al grande pubblico l’esperienza gastronomica stellata. All’interno di un piccolo vasetto di vetro è infatti custodita, come in uno scrigno, la prelibatezza e la ricercatezza di un piatto di alta cucina, realizzato da chef di primissimo livello della ristorazione tricolore.
Il format è stato studiato dagli chef Matteo Pisciotta e Andrea Piantanida, che per JARIT hanno ideato e messo sotto vetro diverse ricette, creando così un vero e proprio menu, la “Collezione Jarit”. Le Collezioni, che includono ricette di grandi chef stellati ambasciatori della cucina italiana, cambiano ogni due mesi e tutti i piatti vengono realizzati rispettando la qualità e la stagionalità delle materie prime. In questo periodo potete viziare il palato con il “Riso basmati con verdure, gamberi, salsa curry, banane e mandorle” ideato dallo chef Claudio Sadler oppure la “Girandola di pesce bianco su schiacciata di patate al limone e salsa alla barbabietola e yogurt alla menta” di Antonella Ricci. Katia Maccari propone la “Lasagnetta agli spinaci, ragù di faraona e fonduta al Parmigiano” accompagnata alla “Coda di bue su disco di polenta al fieno e crema di patata affumicata” di Giancarlo Morelli. Christian Di Bari mette in pista il “Riso di venere, zuppa di carote, spigola al dragoncello. L’ideatore di JARIT, Matteo Pisciotta presenta la “Cotoletta di vitello alla milanese, crema di cavolfiore, carpione delicato”, mentre Lorenzo Secondi esibisce “Tonno di coniglio, barba dei frati,olive taggiasche e pomodoro secco”.
Imperdibile il “Ganassino di vitello stracotto, fagioli cannellini all’uccelletto” di Andrea Piantanida oppure l’”Arancino di riso agli asparagi, taleggio fondente” di Alberto Broggini. Chiude la ricca offerta Lorenzo Secondi con i “Ravioli di magro, pomodoro siciliano e basilico”. I piatti sottovetro, attraverso un processo di pastorizzazione, possono essere conservati in frigorifero per 18 giorni senza subire alcuna alterazione chimica ed organolettica. Prima di essere consumati, è sufficiente riscaldare il vasetto per pochi minuti in un forno a microonde o a bagnomaria. Potete trovare JARIT, anche Take-Away a Milano in piazza Santo Stefano e presso il “Dopolavoro Bicocca”, Hangar Bicocca oppure a Varese nella “Pasticceria Zamberletti” (Via Manzoni) e “Groppello”.

Per accompagnare il cliente in un percorso completo di degustazione, Marco ha scelto una selezione di piatti che racchiude il meglio del Paese con gli occhi a mandorla. Ogni portata, in effetti, è una piacevole sorpresa. Deliziose l’anatra alla pechinese, il rombo in crosta e le zampette di gallina con soia nera fermentata. Sulla strada tra Lerici e Tellaro, in Liguria, in uno dei più incantevoli golfi di tutta Italia, amato e decantato da Grandi come David Herbert Lawrence, Mario Soldati, Indro Montanelli, Percy Byssne Shelley, Emma Orczy, George Sand, Lord Byron, Gabriele D’annunzio, Sandro BottIccelli (nel suo celebre dipinto “Nascita di Venere” nello sfondo è raffigurato il Golfo de La Spezia) e battezzato dal commediografo Sem Benelli il “Golfo dei Poeti”, c’e’ una piccola insenatura naturale dove regna una pace e un silenzio tale da consentire l’ascolto di una sola melodia: l’eco del mare.
Ogni angolo di questo posto magico racconta una storia, ed è una storia d’amore: l’amore per la famiglia, per il mare, l’amore per quella pace e serenità che solo il tempo perduto può regalare.
Definire l’ “Eco del Mare” una struttura semplicemente “bella” o “accogliente” è limitante, perché oltre alla bellezza e al caldo benvenuto riservato agli ospiti, c’è qualcosa all’ “Eco del Mare” che va ben al di là del fattore estetico: c’è la passione della proprietaria Francesca Mozer (ereditata da papa’ Francois e mamma Nicoletta) per la sua attività. C’e’ la grande voglia di condividere gli interessi di una vita con gli ospiti e il desiderio di scoprire il loro mondo, di comprendere cosa li ha portati in quell’angolo di paradiso.
Ad un viaggiatore spensierato basterà l’atmosfera magica della spiaggia e la vista sul mare blu incontaminato, unito alla deliziosa cucina della locanda, per sentirsi appagato; l’ospite più attento, invece, noterà quelle attenzioni speciali, quei dettagli, disseminati ovunque, che lo faranno sentire accolto, benvenuto, atteso.
“Home away from home” è sicuramente l’espressione più adatta per descrivere L’ “Eco del Mare”: un luogo sospeso nel tempo, avvolgente, delizioso, animato da uno spirito e da un sorriso familiari.

The Doria Park is an ideal location for exploring the coastal villages and towns of the Cinque Terre and the eastern Italian Riviera. The fritto misto is exquisitely light and fresh from the sea and the pastas are all hand made in the hotel kitchen. Dinner may be taken in the dining room or on the adjacent terrace with its lovely views over the harbor.
Lerici is set like a gem in one of the most beautiful and scenic parts of Italy. Lush hills and a magnificent sea make this village the “Pearl” of the Gulf of the Poets. When the sun sets, Lerici becomes even more charming. The small streets and the promenade by the sea, lined with beautiful shops, are bustling with activity late into the evening.Una costa dai mille colori, suggestiva e unica. Un borgo a picco sul mare, verdi colline e acqua cristallina. Lerici e il suo mare ti lasciano senza fiato e non sorprende affatto che questa terra fu particolarmente amata da poeti e scrittori come Shelley, Byron, Petrarca e Montale. Da loro ha preso il nome di “Golfo dei Poeti” che da Lerici arriva fino a Portovenere abbracciando tra due promontori spiagge, coste frastagliate, mare azzurro, antichi borghi e natura selvaggia.

Il tutto sotto la supervisione di Giulia e dell’ottimo Direttore Lorenzo che stanno addestrando al meglio il personale di sala.

Nato per vendere sigari, sigarette e profumi, questo piccolo e prezioso locale, adiacente ai due ristoranti e alla pasticceria, offre ora un’ampia selezione di prodotti gastronomici che Giacomo Bulleri, insieme al genero Marco Monti ha scelto e personalizzato con il proprio nome.

A small strip of Via Sottocorno is just such a discovery, where not one, but four little gems are waiting to be uncovered. Da questa iniziativa il Gruppo Giacomo intende lanciare il suo brand, grazie anche alla collaborazione di tanti piccoli artigiani del gusto che già riforniscono i ristoranti. Per ora è possibile scegliere tra oltre 50 prodotti che vanno dal vino, agli olii, dalla passata di pomodoro dop, al miele di montagna. Nella Tabaccheria Giacomo si possono anche consumare splendide colazioni al bancone, con i croissant e i dolci della pasticceria Giacomo, aperitivi e dopocena a base di golosi “bocconi” gourmet, ispirati soprattutto alla tradizione gastronomica toscana.Per finire, l’arredo è un mix di richiami all’Art Decò e al british. Mobili antichi parigini, vetrine anni ’20, tavoli rotondi e un bancone di fine ‘800 di una vecchia macelleria.

St. Moritz e l’Engadina sono quei posti che amo definire “leggendari”. Mi è bastato soggiornare per un weekend in questi fantastici paesaggi per farmeli amare subito.
Il Kempinski Grand Hotel des Bains di St Moritz, ottimamente diretto dal giovane Reto Stöckenius, è l’albergo storico “5 stelle lusso” costruito nel 1874 proprio sopra la fonte di Mauritius dalla quale sgorga l’acqua minerale e terapeutica che ha dato il nome alla splendida località turistica engadinese.
Fuori è un bianco castello con le torri quadrate tipiche di fine ottocento, mentre all’interno è caratterizzato da spazi moderni per sottolineare il concetto di un lusso sobrio e funzionale.

Reto Stöckenius is the general manager the management of the Kempinski Grand Hotel des Bains in St. Moritz. The 52-year-old Swiss man is a specialist in the field of development and has over 25 years of international experience in the luxury hotel industry. Last worked Reto Stöckenius as Board Member and Managing Director for the Tessal & Leopoldo Hotels (Villa Principe Leopoldo Hotel, Villa Sassa Hotel Residence & Spa, Esplanade Hotel & Spa and Spa Cademario Hotel & Spa).
In 1989, he set the first milestone in his career by graduating from the Hotel Management School in Lausanne. Two years later, he moved to the Boca Raton Resort & Club in Florida. The next steps of his career led him through the Dominican Republic to St. Moritz, where he exhibited his management skills at the Kulm Hotel in the food and beverage department. The next position was as food and beverage director at the Caesar Park Panama Westin Hotels & Resorts in Panama.
His first challenge as general manager occurred when he joined in 1997, the Hotel Riu Palace Meloneras, after which he assumed leadership of the Riu Gran Palace Maspalomas Oasis, also in the Canaries. Then, 2004 saw his career as general manager continuing to the Tessal & Leopoldo Hotels in the Villa Sassa Hotel Residence & Spa. Now, Stöckenius returns to St. Moritz after almost 20 years.

La sua carriera lo ha poi portato nella Repubblica Dominicana ed a St. Moritz, dove dà prova della sua capacità di gestione al Kulm Hotel come food and beverage manager. Successivamente è stato food and beverage manager al Caesar Park Panama Westin Hotels & Resorts.
